Double Choc Chip Cookies
Another day at home...another day of baking...
Today's craving called for chocolate chip cookies, and I knew just the recipe to go for! These can literally be made from start to finish in under 25 minutes and if you don't have the patience to wait for them to cool, they are delicious straight from the oven!
My house currently smells like a chocolate factory and I am so okay with that.
Feel free to add whatever chocolate you like to these really, I fancied dark and white today but they would work well with chocolate orange, mini eggs, something fancy like Toblerone chopped up small would be so good too!
Makes around 15 cookies of a decent size!
Ingredients;
- 120g Softened butter
- 120g Soft brown sugar
- 120g Caster sugar
- 1 Egg
- 250g Self raising flour
- 50g Rolled oats
- 300g Chocolate (if not using chocolate chips, make sure it is chopped into small pieces!)
Method;
- Begin by preheating the oven to 180C and lining two/three baking trays with greaseproof paper
- In a bowl, add the butter and two sugars together and mix well - preferably using either a stand mixer or an electric whisk to get them nice and light and fluffy
- Crack in the egg and beat again until all combined
- Now mix in the flour and the oats - you can still use the electric mixer for this bit
- Add in the chocolate that you've chosen to use and mix in - this bit is easier by hand to make sure it is spread throughout the whole mixture
- Using a tablespoon, scoop the mixture and then roll into a ball with your hands. Don't put any more than 6 on your tray - you want them to be well spaced so they don't merge into one giant cookie (or maybe that is what you want!)
- Bake in the oven for 12-14 minutes and turn the trays half way to make sure that they cook evenly on both sides.
- They should be golden brown on top and it's ok if they're a little squishy when they come out as they'll carry on cooking for a bit whilst cooling on the trays.
- Leave to cool and then transfer to a wire rack * before eating!
*Optional - eat straight from the tray if you fancy! Delicious with a scoop of ice cream for pudding, or with a cup of tea in the afternoon.
