Chocolate Orange Cookies
So it's been a while...time clearly does fly in a national pandemic, two lockdowns and a new tiered system of life.
If you know me at all, you'll know that chocolate orange is my all time favourite flavour and if you could see my chocolate drawer in the freezer (controversial I know) this love would be proved to you.
Since I last posted, we've come out of the first lockdown, I started a Undergraduate course at UEA, moved in with one of my oldest school friends and numerous other events along the way. I've definitely still been baking though and these cookies seemed like the perfect way to spend a Sunday afternoon (along with watching the Crown).
They are SO easy to make and smell SO good in the oven at the moment - I'll feedback on the taste but I can't imagine it's anything but great. I actually found the recipe from a blog I follow on Instagram, but adapted to basically add in more chocolate.
Ingredients:
- 100g soft brown sugar
- 100g caster sugar
- 125g butter (softened)
- 1 egg
- Pinch of salt
- 225g self raising flour
- Splash of milk
- 180g orange chocolate (Terry's or giant choc orange buttons work well!)
- Pre-heat the oven to 180degreesC.
- Beat the butter and sugars together until paler in colour and well combined (I did this by hand today but would usually use an electric whisk)
- Add in the egg and beat well
- Now stir in the flour, salt and splash of milk to loosen the mixture.
- Chop up the chocolate into chunks and mix this in too
- Line a 20x20cm tin with greaseproof paper and spread the mixture evenly.
- Either with chocolate orange segments or buttons, place these over the top (I did 12 which is roughly the size I'll chop each cookie)
- Bake in the oven for 17-23 minutes until golden brown. If it's a little wobbly when it comes out that's ok, it'll keep cooking in the hot tin.
- Leave to cool in the tin before cutting - it's hard to resist, I know!
