Malteser Fridge Cake

So if you've given up chocolate for lent (sorry dad), or are into your healthy eating, I'd click straight off this page and have another google. These are probably one of the most calorific things I've ever made but equally one of my favourites - a go to when you need a quick fix.

This is the kind of recipe that I can't remember where I first found it, and I'm sure the quantities change every time I make these little squares of goodness. But they turned out well and are so worth it.

It was my friend Ellie that reminded me of these the other day and I remembered that I used to bake them for school cake sales all the time - so I thought it was time to recreate.



Ingredients:


  • 200g milk chocolate
  • 100g butter
  • 75g golden syrup
  • 225g digestive biscuits
  • 240g maltesers 

Method:

  1. Begin by melting the chocolate, butter and golden syrup together in a pan over a low heat.
  2. Whilst waiting for this mixture to melt, line a baking tray with greaseproof paper and crush the digestive biscuits into fine crumbs.
  3. Once the chocolate mixture has melted, stir in the digestive biscuits until well combined and then quickly mix in 3/4 of the maltesers. 
  4. Pour the mixture into the baking tray and spread evenly - quickly press in the remaining maltesers and place the tray in the fridge before they can melt too much!
  5. Leave to set in the fridge - around an hour but longer if you can resist! 
  6. Cut into 'bite size' squares and enjoy the calorific (bad)goodness.
