Banana and Nutella cupcakes
So this is probably my last post from Bermuda - :( - but I have been baking a lot! Today I made some banana and Nutella cupcakes and they're probably my favourite bake of the month but it's a close call!
They're so easy to make and taste SO good - especially when they came straight out of the oven.
Annoyingly I didn't get any photos but despite tasting amazing, they're not that special aesthetically!
INGREDIENTS; Makes 10 cupcakes

INGREDIENTS; Makes 10 cupcakes
- 4oz self raising flour
- 4oz caster sugar
- 4oz butter (unsalted)
- 2 eggs
- 1 banana
- 1tsp baking powder
- 1.5tbsp Nutella (melted)
METHOD;
- Preheat the oven to 180degreesC and place cupcake cases into tin.
- Begin by weighing out the flour, sugar, butter and eggs into a bowl. I used melted butter as I was mixing by hand but softened will work too if using an electric mixer. Beat until well combined and the mixture has lightened in colour.
- Mash the banana well and fold into the batter along with the baking powder.
- Spoon the mixture into the cake cases but only fill half way - making sure there is mixture left over to top them up with.
- Take your slightly melted Nutella and spoon a teaspoon into each of the cases on top of the batter.
- Divide up the rest of the mixture to top up the cupcake cases on top of the Nutella.
- Place tray in the oven and bake for between 10-15 minutes. A skewer should come out clean and they should be golden brown on top!
- For prime enjoyment, eat when fresh from the oven! But they're still as good once cooled.
